Quinoa Stuffed Peppers

3 cups cooked quinoa
1 (4 oz.) can green chiles
1 cup canned or frozen corn
½ cup canned black beans, drained and rinsed
½ cup petite diced tomatoes
½ cup shredded Pepper Jack cheese
¼ cup crumbled Feta cheese
3 Tbsp. fresh chopped cilantro
1 tsp. cumin
1 tsp. garlic powder
½ tsp. onion powder
½ tsp. chili powder, or more to taste
Salt and ground pepper, to taste
6 bell peppers, tops cut, stemmed and seeded

Preheat oven to 350° F. Line a 9×13-inch baking dish with parchment paper. In a large bowl, combine all ingredients except bell peppers. Spoon filling mixture into each pepper and place on baking dish. Bake 25-30 minutes until peppers are tender and filling is heated through. Serve immediately.
